Tasty Galentine’s Cocktails Your Girl Squad Will Love!

Valentine’s Day may be just around the corner, but we’re more concerned with what happens on February 13th—Galentine’s Day! Whether you’re going solo this year or making your girl squad a priority, Galentine’s Day is the perfect time to celebrate friendships, loyalty, and the love you have for each other.
Of course, such a grand occasion isn’t complete without plenty of drinks! So, if you’re planning to host your group’s celebration this year, here are two delicious Galentine’s Cocktails you can serve up in bulk for an unforgettable evening!
Our first pick is a bright pink hibiscus cocktail from the kitchn that serves 8 to 12 and can be made up to a day in advance to reduce stress on the day of your party.
Bittersweet Hibiscus Galentine’s Day Pitcher Cocktail
· 1 cup granulated cane sugar
· 1 cup water
· 4 oz. fresh ginger, peeled and coarsely chopped
· 4 ½ cups (36 oz) brewed hibiscus tea
· 1 ½ cups white rum
· 6 oz freshly squeezed lemon juice (about six lemons)
· 3 oz Aperol
· 1 (750 ml) bottle dry sparkling wine, chilled
· Ice
· Fresh berries for garnish
Instructions
1. Place cane sugar, water, and ginger in a small saucepan and bring to a boil over medium-high heat, stirring to dissolve sugar.
2. Reduce heat and simmer for 10 minutes.
3. Remove from heat and let cool completely before fitting a fine-mesh strainer over a small bowl and pouring syrup through the strainer. Discard solids.
4. Transfer 6 oz of the syrup into a large pitcher or beverage dispenser. Save the rest for another cocktail or use.
5. Add the tea, rum, lemon juice, and Aperol to the pitcher. Stir until incorporated and chill until ready to serve.
6. Before serving, add ice and sparkling wine to the chilled mixture, then stir gently.
7. Add more lemon juice or ginger syrup to taste.
8. Garnish with fresh berries.
The second drink we’re falling for this year is the Pink Senorita from Delish! This pink twist on a margarita comes together in just 15 minutes and makes four servings, but it can easily be doubled for a crowd!
Pink Señoritas
· Lemon wedge (for rimming glasses)
· Coarse salt (for rimming glasses)
· 2 cups ice
· 2 ¼ cups pink lemonade
· ¼ cup fresh lemon juice
· ½ cup triple sec
· 1 cup tequila
· 4 lemon slices for garnish
Instructions
1. Rub a lemon wedge around the rim of four glasses, then dip the rims into salt.
2. Add ice to each glass. Combine pink lemonade, lemon juice, triple sec, and tequila. Stir to combine, then distribute evenly between glasses.
3. Garnish each glass with a lemon slice and serve.
