Pineapple Coconut Lemon Ginger Wellness Shots
· 1 pineapple (flesh only), cut into chunks
· 1 cup coconut water
· Juice from 2 lemons
· ½ lb fresh ginger, scrubbed and rinsed
Instructions
1. Scrub the ginger with your hands or a veggie scrubber brush to clean; do not peel.
2. Remove the pineapple's top, skin, and core and cut into chunks.
3. Break the ginger into small pieces and blend with the pineapple chunks. (If you have a small blender, blend in batches until all pineapple and ginger are blended.)
4. Over a large bowl, press the juice through a fine mesh strainer using a rubber spatula.
5. Combine the lemon juice and coconut water with the pineapple and ginger juice mix.
6. Enjoy!
